What's better than lemon meringue pie? Uhh...well lemon meringue cupcakes!
I made these delicious, absolutely adorable cupcakes cupcakes a few weeks ago and they were a big hit.
Sweet, tangy and so cute!
These are multi-stepped cupcakes, well worth the extra step in making the lemon curd.
You could definitely just make lemon cupcakes with the meringue frosting but I think the lemon curd just puts it over the top in the delicious meter.
3 Cups all-purpose Flour
1 Tablespoon Baking powder
1/2 Teaspoon salt
1 Cup unsalted Butter, room temperature
2 cups Sugar
4 Eggs, room temperature
3 Tablespoons Lemon zest (about 3 lemons)
2 Tablespoons Lemon juice
1 Teaspoon Vanilla extract
1 cup Buttermilk (I used Yogurt)
